Ingredients – serves 8
2 eggs
150 g sugar
80 g ghee (clarified butter)
450 g white spelt flour
1 cup of milk
1 teaspoon of Fruit Masala Virya®
1 teaspoon of baking powder
½ lemon zest
100 g jam
Method
In a bowl beat the eggs with the sugar until you get a smooth cream. Add, while constantly stirring, one at a time: the butter, the sieved flour, enough milk to keep the final mixture soft, and the Fruit Masala Virya®. Add the baking powder last.
Pour the mixture into a buttered ring shaped baking tin. At this point add, in small doses (use a teaspoon), jam on the surface of the dough and sweeten everything.
Bake in the oven at 180 ° C for about 1 hour.
