Ingredients – serves 4
400 g tagliolini pasta
2 large onions, preferably white
50 g ghee (clarified butter)
1 teaspoon of Appeto Virya®
1 teaspoon of trikatu Virya®
grated Parmesan cheese (optional)

Method
Peel the onions and cut into thin slices. Pour into a non-stick pan with a little water, with Appeto Virya®, trikatu Virya®. Cook them until they are reduced almost to mush. Turn off the heat and add the ghee.
In the meantime cook the tagliolini pasta in salted water, drain and toss with the onion mix.

Once served, you may add some grated Parmesan cheese to taste over the pasta.
