Ingredients Serves 2

125 g white tofu
160 g Spelt fusilli
1 medium white onion
2 cloves garlic
2 teaspoons of ginger powder
1 teaspoon of turmeric
1 teaspoon of trikatu Virya®
½ teaspoon of nutmeg
rock salt to taste
extra virgin olive oil to taste

Method
Finely chop the onion and garlic and put it in a pan to simmer with a little water. Dice the tofu and add to the mixture simmer. Then add the ginger, turmeric, trikatu Virya®, nutmeg, salt. Cook for about 10 minutes over medium heat, then whisk in the blender with a little ‘oil to get a smooth cream.
Cook the pasta separately in plenty of hot salted water. Drain and then add the pasta to the cream of tofu and fry for 2 minutes, in order to mix well. Serve immediately.
