Season: late Summer, Fall, Winter
Ingredients – serves 6:
2 eggs
150 g of sugar
100 g of ghee (clarified butter)
400 g of white spelt flour
1 teaspoon of grated lemon peel
1 pinch of salt
Milk to taste
1 dose of baking powder
1 teaspoon of Fruit Masala Virya®
200 g of fig jam
Method
Whisk the eggs with sugar, then add the grated zest, Fruit Masala Virya®, ghee, salt, stirring constantly. Slowly add the flour, preferably sifted, softening it all with milk to make a fairly thick batter making sure that no lumps are formed. Finally stir in the baking powder.
Pour ¾ of the dough in a buttered baking dish, cover with the jam, put over the remaining dough by shapeless spoonfulls and sprinkle the surface with 2 tablespoons of sugar.
Bake at 180 °C for about 30 minutes. Once cooked, let it cool in the oven.
