Ingredients – Serves 4
360 g short pasta
1 small white cabbage
1 lemon
1 teaspoon of trikatu Virya®
1 teaspoon of Appeto Virya®
mint leaves to taste
extra virgin olive oil to taste
rock salt to taste
Method
After having washed and cleaned the cabbage from the core, finely chop the leaves. Then, cut the pieces of leaf again horizontally in half to obtain small pieces of 2-3 cm in length. Place it in a bowl and season with lemon juice, the lemon zest, trikatu Virya®, Appeto Virya®, salt and extra virgin olive oil. Leave to soak for one hour.
Seperately, cook the pasta in boiling salted water. Drain and season with the white cabbage previously prepared and sauté for 1 to 2 minutes, stirring constantly. Serve adding the mint leaves broken by hand.
