Ingredients – serves 8
2 eggs
150 g sugar
80 g of ghee (clarified butter)
450 g white spelt flour
1 cup of milk
1 teaspoon of Fruit Masala Virya®
1 teaspoon of baking powder
½ grated lemon zest
100g of raisins
Method
In a bowl beat the eggs with sugar until smoothy. Then add one at a time, butter, flour, milk in the quantities needed for the final mixture to remain soft stirring constantly, the Fruit Masala Virya® and 2/3 of the raisins. At the end add the baking powder. Pour the batter into a buttered cake tin. Now add the remaining raisins on the surface and sweeten the surface of the dough.
Bake in a preheated oven at 180 ° C for about 1 hour.
