Ingredients – serves 4
800g Brussels sprouts
1 small leek
1 clove garlic
1 shallot
150 ml lager
50 g ghee (clarified butter)
1 teaspoon of trikatu Virya®
1 teaspoon of Appeto Virya®
1 teaspoon of sugar
1 teaspoon of marjoram
rock salt to taste

Method
After removing the outer leaves of the sprouts, remove the protruding lower part and cut a cross with a small knife, then wash thoroughly and drain.
Separately, wash and then finely chop the leeks, shallots and garlic. Let them simmer in a pan with very little water, add sugar, Brussels sprouts, the trikatu Virya®, the Appeto Virya®, marjoram, cook them on high heat for about 5 minutes, until they are well braised.
Then, blend the sprouts with beer and let it evaporate for a few minutes. Adjust the salt and cover with a lid, lowering the flame. Cook for about ten minutes. Remove the lid, raise the heat and evaporate the remaining liquid turning the sprouts with a wooden spoon, so they do not stick to the bottom. Serve hot!
